Ingredients
1 pound of shrimp, finely diced
½ cup of zucchini, shredded
Red Peppers, finely diced
¾ cups of flour
1 cup of panko breadcrumbs
1-2 eggs
For the sauce
4 tablespoons of mayo
1 teaspoon of sriracha
½ teaspoon of parika
Optional Toppings
Parsley, to top
Directions
Mix all ingredients
Add more flour as needed
Heat a skillet with cooking oil on medium temperature
Lightly dust the cakes with flour before cooking the cakes for 3 minutes on each side
