Vegan Mocha Chocolate Chia Pudding
Try this delectable healthy spin on cookies & cream ice cream!
Ingredients
1 banana
1 cup of frozen coconut milk
¼ cup of chia seeds
½ teaspoon of vanilla essence
1 teaspoon of ground coffee
½ teaspoon of cinnamon
¼ teaspoon of nutmeg
2 tablespoons of maple syrup (or honey)
For toppings
Unsweetened coconut, shredded
1 teaspoon of ground coffee
Shredded dark chocolate, shredded
Slivered almonds
An additional 1 teaspoon of ground coffee
Directions
Place the coconut milk, banana, vanilla essence, cinnamon, nutmeg, and maple syrup in a blender and blend until all ingredients are incorporated
Stir in the coffee and chia seeds
Refrigerate the mixture for at least 4 hours or overnight to let it thicken
Once the pudding has congealed, place in small ramekins or clear glasses and top with shredded dark chocolate and ground coffee.
