Vegan Mocha Chocolate Chia Pudding

Try this delectable healthy spin on cookies & cream ice cream!


  • 1 banana

  • 1 cup of frozen coconut milk

  • ¼ cup of chia seeds

  • ½ teaspoon of vanilla essence

  • 1 teaspoon of ground coffee

  • ½ teaspoon of cinnamon

  • ¼ teaspoon of nutmeg

  • 2 tablespoons of maple syrup (or honey)

For toppings

  • Unsweetened coconut, shredded

  • 1 teaspoon of ground coffee

  • Shredded dark chocolate, shredded

  • Slivered almonds

  • An additional 1 teaspoon of ground coffee


  1. Place the coconut milk, banana, vanilla essence, cinnamon, nutmeg, and maple syrup in a blender and blend until all ingredients are incorporated

  2. Stir in the coffee and chia seeds

  3. Refrigerate the mixture for at least 4 hours or overnight to let it thicken

  4. Once the pudding has congealed, place in small ramekins or clear glasses and top with shredded dark chocolate and ground coffee.
